Making it happen

On the island of St Lucia we are restoring a 130-acre cocoa plantation. The initial work involves straight forward manual labour combined with DNA testing of the tree varieties to determine the best varieties for now and the future. The next stage will be to install chocolate making equipment to convert our beans, and others on the island into chocolate on site. This will create local jobs and generate the added value in St Lucia rather than doing it in Europe as is normally the case.
